Mango Avocado Salsa
This delicious, refreshing, and pretty salsa is awesome with tortilla chips and a cold beer.
Mango Avocado Salsa
- 1 ripe mango, diced
- 1 ripe avocado, diced
- 1 small red onion, diced
- 1 small tomato (or several cherry tomatoes, diced)
- handful cilantro, chopped
- juice of one lime
- salt and pepper to taste
Mix together all ingredients and adjust seasoning. To make tortilla chips, heat a pot of oil to 350 degrees. Chop corn tortillas into eighths. When oil is hot, carefully place separated tortilla pieces in, and cook until golden brown. Remove with a slotted spoon. Drain over a baking sheet with a cooling rack, and salt immeditely. Enjoy the chips warm with the cool salsa.
